Smoky Pineapple Tofu Stir-Fry

Ingredients:

-1 block of extra-firm tofu, drained and cubed
-1/2 cup oat milk
-1/2 teaspoon smoked paprika
-1/4 teaspoon garlic powder
-1/4 teaspoon onion powder
-1/4 teaspoon black pepper
-1/4 teaspoon salt
-1/2 cup diced pineapple
-1/2 cup sliced mushrooms
-1/2 cup sliced leek
-1/2 cup diced onion

Instructions:

1. Heat a large skillet over medium-high heat.

2. Add the cubed tofu to the skillet and cook for 5 minutes, stirring occasionally.

3. Add the oat milk, smoked paprika, garlic powder, onion powder, black pepper, and salt to the skillet. Stir to combine.

4. Add the pineapple, mushrooms, leek, and onion to the skillet. Stir to combine.

5. Cook for an additional 5 minutes, stirring occasionally, until the vegetables are tender.

6. Serve hot. Enjoy!
