Make Sopa de Arroz con Huevo y Verduras
Recipe: Sopa de Arroz con Huevo y Verduras
Ingredients:
- 1 cup of rice
- 2 eggs
- 1 potato, diced
- 2 tomatoes, diced
- 3 chile güero peppers, sliced
- 1/2 cup of peas
- 1 apple, diced
- 1 onion, chopped
- 2 cups of milk
- 1/4 cup of flour
- 2 tablespoons of oil
- Salt and pepper to taste
Instructions:
1. In a large pot, heat the oil over medium heat. Add the chopped onion and cook until translucent.
2. Add the diced potato, tomatoes, chile güero peppers, peas, and apple to the pot. Cook for about 5 minutes until the vegetables start to soften.
3. Pour in the milk and bring to a simmer. Season with salt and pepper.
4. In a separate bowl, whisk together the flour with a little bit of water to make a slurry. Slowly pour the slurry into the pot while stirring continuously to thicken the soup.
5. In a separate pan, cook the rice according to package instructions.
6. Once the soup has thickened, crack the eggs into the pot and gently stir to create egg ribbons.
