Recipe: Soto Betawi
Ingredients:
- 500g beef, sliced thinly
- 2 stalks lemongrass, bruised
- 4 kaffir lime leaves
- 3 cloves garlic, minced
- 1 onion, chopped
- 2 tomatoes, diced
- 200ml coconut milk
- 1 liter beef broth
- 2 tablespoons cooking oil
- Salt and pepper to taste
- Fried shallots for garnish
- Lime wedges for serving
- Cooked rice vermicelli noodles
Instructions:
1. In a large pot, heat the cooking oil over medium heat. Add the minced garlic and chopped onion, sauté until fragrant.
2. Add the sliced beef to the pot and cook until browned on all sides.
3. Pour in the beef broth and add the lemongrass, kaffir lime leaves, and diced tomatoes. Bring to a simmer and let it cook for about 1 hour until the beef is tender.
4. Stir in the coconut milk and season with salt and pepper to taste. Let it simmer for another 10 minutes.
5. Remove the lemongrass and kaffir lime leaves from the pot before serving.
6. To serve, place a portion of cooked rice vermicelli noodles in a bowl, ladle the hot soto betawi over the noodles.
7. Garnish with fried shallots and serve with lime wedges on the side.
