South American Chicken Quinoa Bowl
Ingredients:
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 large yucca root, peeled and cut into cubes
- 2 ripe plantains, peeled and sliced
- 1 cup quinoa
- 2 cups chicken broth
- 1 large tomato, diced
- 1 head lettuce, shredded
- 1 small onion, diced
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5 minutes per side, or until cooked through. Remove the chicken from the skillet and set aside.
2. Add the garlic, yucca, and plantains to the skillet and cook for 5 minutes, stirring occasionally.
3. Add the quinoa and chicken broth to the skillet and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes.
4. Add the tomato, lettuce, and onion to the skillet and cook for an additional 5 minutes.
5. Slice the chicken breasts into strips and add to the skillet. Cook for an additional 5 minutes.
6. Serve the South American Chicken Quinoa Bowl warm. Enjoy!
