Ingredients:
- 1 cup toor dal (split pigeon peas)
- 1 cup mixed vegetables (carrots, beans, potatoes)
- 1 small piece of ash gourd (winter melon)
- 1/2 cup pumpkin
- 1/2 cup grated coconut
- 1/2 tsp turmeric powder
- 1 tsp cumin seeds
- 2-3 green chilies
- 1/2 tsp mustard seeds
- A pinch of asafoetida
- Curry leaves
- Salt to taste
- Water as needed
Step by Step Guide:
1. Cook the toor dal in a pressure cooker with turmeric powder and water until soft and mushy.
2. In a separate pot, cook the mixed vegetables, ash gourd, and pumpkin with some water until they are tender.
3. Grind the grated coconut, cumin seeds, and green chilies into a fine paste.
4. Add the ground paste to the cooked vegetables and mix well.
5. Add the cooked dal to the vegetable mixture and stir to combine.
6. In a small pan, heat some oil and add mustard seeds. Once they splutter, add curry leaves and a pinch of asafoetida.
7. Pour this tempering over the mixed vegetable curry and mix well.
8. Add salt to taste and simmer the curry for a few more minutes.
9. Serve hot with steamed rice or chapati.
