Southwest Cauliflower Rice Bowl

Ingredients:

-1 head cauliflower
-2 tablespoons olive oil
-1 teaspoon chili powder
-1 teaspoon smoked paprika
-1 teaspoon ground cumin
-1/4 teaspoon cayenne pepper
-1/2 teaspoon dried oregano
-1/2 teaspoon garlic powder
-1/2 teaspoon onion powder
-1/2 teaspoon fresh cracked pepper
-1 cup brown rice
-2 cups water
-1/2 cup black beans
-1/2 cup corn
-1/2 cup grape tomatoes, halved
-1/4 cup finely chopped cilantro
-1/4 cup green onion, sliced
-1/4 cup mayonnaise
-1/4 cup sour cream
-1 lime, juiced
-1/4 teaspoon salt
-Avocado slices, for garnish

Instructions:

1. Preheat oven to 425 degrees F.

2. Cut the cauliflower into small florets and place on a baking sheet. Drizzle with olive oil and season with chili powder, smoked paprika, ground cumin, cayenne pepper, dried oregano, garlic powder, onion powder, and fresh cracked pepper. Toss to coat and spread into an even layer. Roast for 20 minutes, stirring halfway through.

3. Meanwhile, bring the brown rice and water to a boil in a medium saucepan. Reduce heat to low, cover, and simmer for 20 minutes.

4. In a large bowl, combine the cooked cauliflower, cooked brown rice, black beans, corn, grape tomatoes, cilantro, green onion, mayonnaise, sour cream, lime juice, and salt. Stir to combine.

5. Divide the mixture among four bowls. Top with avocado slices and serve. Enjoy!
