Southwest Quinoa Bowl

Ingredients:

-1 cup uncooked quinoa
-1/2 cup cilantro, chopped
-1/2 cup pico de gallo
-1 lb ground turkey
-1 can black beans, drained and rinsed
-1 cup sweet corn
-1 packet taco seasoning
-1 avocado, sliced
-1/2 cup broccoli slaw
-1 tsp chicken bouillon
-1 lime, juiced
-2 cups romaine, chopped
-1/2 cup colby jack shredded cheese
-2 tbsp extra virgin olive oil

Instructions:

1. Preheat oven to 350 degrees F.

2. In a large bowl, combine quinoa, cilantro, pico de gallo, ground turkey, black beans, sweet corn, and taco seasoning. Mix until all ingredients are combined.

3. Spread mixture onto a baking sheet and bake for 20 minutes.

4. Meanwhile, in a large bowl, combine broccoli slaw, chicken bouillon, lime juice, romaine, and colby jack shredded cheese.

5. Drizzle extra virgin olive oil over the top and mix until all ingredients are combined.

6. To assemble the bowls, divide the quinoa mixture evenly among four bowls. Top each bowl with the broccoli slaw mixture and sliced avocado.
