Southwestern Breakfast Burrito

Ingredients:

- 2 large eggs
- 2 tablespoons shredded cheese
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon garlic powder
- 2 tablespoons salsa
- 2 large flour tortillas
- 1 tablespoon butter
- 1/4 cup cooked black beans
- 1/4 cup diced cucumber

Instructions:

1. In a medium bowl, whisk together the eggs, cheese, pepper, and garlic powder.

2. Heat a large non-stick skillet over medium heat. Add the egg mixture and cook, stirring occasionally, until the eggs are cooked through.

3. Spread each tortilla with 1 tablespoon of salsa.

4. Place the cooked eggs in the center of each tortilla.

5. Top each burrito with black beans, cucumber, and cheese.

6. Fold the sides of the tortilla over the filling and roll up.

7. Heat the butter in the same skillet over medium heat. Add the burritos and cook until golden brown on each side.

8. Serve warm. Enjoy!
