Make Southwestern Chicken Bowl

Southwestern Chicken Bowl

Ingredients:

- 2 boneless, skinless chicken breasts
- 1 cup white rice
- 2 cups fresh spinach
- 1 large sweet potato, peeled and diced
- 1 avocado, pitted and diced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- Salt and pepper, to taste

Instructions:

1. Preheat oven to 400 degrees F.

2. Place diced sweet potato on a baking sheet and drizzle with olive oil. Sprinkle with cumin, chili powder, garlic powder, salt, and pepper. Toss to coat. Bake for 20 minutes, or until tender.

3. Meanwhile, cook rice according to package instructions.

4. Heat a large skillet over medium-high heat. Add chicken breasts and cook for 5-7 minutes per side, or until cooked through.

5. When chicken is cooked, remove from skillet and let rest.

6. Add spinach to the skillet and cook for 1-2 minutes, or until wilted.

7. To assemble the bowls, divide cooked rice, sweet potatoes, spinach, chicken, and avocado between two bowls.

8. Serve and enjoy!
