Southwestern Chili Mac
Ingredients:
-1 lb. hamburger
-1/2 lb. chopped ham
-1/2 onion, diced
-2 cloves garlic, minced
-1 jalapeño pepper, diced
-1/2 tsp. powdered garlic
-1/2 tsp. powdered onion
-1 can chili beans
-1/2 cup salsa
-1/2 cup sour cream
-1/2 cup pepper jack cheese, shredded
-1/2 cup chopped boiled eggs
-1/2 cup chopped lemons
-1/2 cup chopped limes
-1/2 lb. elbow macaroni
-Salt and pepper, to taste
Instructions:
1. Preheat oven to 350°F.
2. In a large skillet, cook hamburger, ham, onion, garlic, and jalapeño pepper over medium heat until hamburger is cooked through.
3. Add chili beans, salsa, sour cream, pepper jack cheese, chopped boiled eggs, lemons, and limes. Simmer for 5 minutes.
4. Meanwhile, cook elbow macaroni according to package instructions.
5. In a large baking dish, combine cooked macaroni and hamburger mixture. Sprinkle with salt and pepper, to taste.
6. Bake for 25 minutes, or until heated through.
7. Serve hot. Enjoy!
