Southwestern Egg Hash
Ingredients:
- 2 eggs
- 1 small onion, diced
- 1 jalapeño, diced
- 1 small potato, diced
- 2 cups spinach, chopped
Instructions:
1. Heat a large skillet over medium heat.
2. Add the onion and jalapeño and cook until softened, about 5 minutes.
3. Add the potato and cook until golden brown, about 10 minutes.
4. Add the spinach and cook until wilted, about 2 minutes.
5. Crack the eggs into the skillet and scramble until cooked through, about 3 minutes.
6. Serve the egg hash warm. Enjoy!
