Southwestern Rice Bowl

Ingredients:

-1 cup cooked white rice
-1/2 cup cooked carrots
-1/2 avocado, diced
-1/2 cup cooked pasta
-1/2 cup diced ham
-1/2 cup cooked corn
-1/2 cup cooked red beans
-1/2 cup cooked ground beef
-1/2 cup sliced mushrooms
-1/2 cup diced onions
-1/2 cup corn cakes

Instructions:

1. Preheat oven to 350°F.

2. In a large bowl, combine cooked white rice, carrots, avocado, pasta, ham, corn, red beans, ground beef, mushrooms, and onions. Mix until all ingredients are evenly distributed.

3. Grease a 9x13 inch baking dish with cooking spray.

4. Pour the rice mixture into the baking dish and spread out evenly.

5. Top with corn cakes, pressing them lightly into the rice mixture.

6. Bake in preheated oven for 25-30 minutes, or until the corn cakes are golden brown and the rice is cooked through.

7. Serve warm and enjoy!
