Southwestern-Style Burrito Bowls
Ingredients:
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 small onion, diced
- 1/2 pound lean ground beef
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 cup chicken broth
- 1/2 cup cooked brown beans
- 1/2 cup cooked white rice
- 1/2 cup diced yellow peppers
- 1/2 cup corn kernels
- 2 tablespoons mayonnaise
- 2 tablespoons sour cream
- 2 tablespoons sriracha sauce
- 2 tablespoons chopped fresh basil
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons grated Parmesan cheese
- 2 tablespoons sliced almonds
- 2 eggs
- 1 large tomato, diced
- 1 large potato, diced
- 2 avocados, diced
- 8 corn tortillas
Instructions:
1. Heat the olive oil in a large skillet over medium heat. Add the garlic and onion and cook until softened, about 5 minutes.
2. Add the ground beef, paprika, salt, and pepper and cook until the beef is no longer pink, about 8 minutes.
3. Add the chicken broth, beans, rice, yellow peppers, corn, mayonnaise, sour cream, sriracha sauce, basil, and cilantro. Stir to combine and cook until the mixture is heated through, about 5 minutes.
4. Remove the skillet from the heat and stir in the Parmesan cheese and almonds.
5. In a separate skillet, cook the eggs to your desired doneness.
6. To assemble the burrito bowls, divide the beef mixture among 8 bowls. Top each bowl with diced tomato, potato, avocado, and a cooked egg. Serve with the corn tortillas. Enjoy!
