Recipe Name: Soy Glazed Chicken and Vegetable Rice

Ingredients:
- 1 lb frozen boneless skinless chicken thighs
- 1 cup baby carrots, sliced
- 1 cup rice
- 1 stalk celery, chopped
- 1/4 cup soy sauce
- 1 cup chicken broth
- 1 can Rotel (diced tomatoes and green chilies)

Instructions:
1. In a large skillet, heat some oil over medium-high heat. Add the frozen chicken thighs and cook until browned on both sides, about 5 minutes per side.
2. Add in the baby carrots, celery, and rice to the skillet. Stir to combine with the chicken.
3. Pour in the soy sauce and chicken broth. Stir well to combine all the ingredients.
4. Add the can of Rotel on top of the mixture. Do not stir.
5. Bring the mixture to a boil, then reduce heat to low. Cover the skillet and let it simmer for about 20-25 minutes, or until the rice is cooked and the chicken is tender.
6. Once everything is cooked through, remove from heat and let it sit for a few minutes before serving.
