Soy Sauce Chicken and Rice
Ingredients:
- 2 tablespoons of soya sauce
- 2 cups of long grain white rice
- 2 boneless, skinless chicken breasts, cut into cubes
- 2 potatoes, peeled and cubed
- 2 tomatoes, diced
- 1 red pepper, diced
- 2 cloves of garlic, minced
- 1 teaspoon of sugar
- ½ cup of white wine
- 1 onion, diced
Instructions:
1. Preheat oven to 375°F.
2. In a large bowl, combine soya sauce, sugar, garlic, and white wine.
3. Add chicken cubes to the bowl and mix until the chicken is evenly coated.
4. Place chicken in a baking dish and bake for 25 minutes.
5. Meanwhile, in a large pot, bring 4 cups of water to a boil.
6. Add rice and stir.
7. Reduce heat to low and simmer for 15 minutes.
8. In a large skillet, heat oil over medium heat.
9. Add onions, potatoes, tomatoes, and red peppers and cook for 5 minutes.
10. Add cooked chicken to the skillet and mix until all ingredients are evenly combined.
11. Add cooked rice to the skillet and mix until all ingredients are evenly combined.
12. Cover skillet and simmer for 10 minutes.
13. Serve hot. Enjoy!
