Ingredients:
- 1 red onion, thinly sliced
- 2 cups of rice
- 4 scallions, chopped
- 4 tablespoons of butter
- 4 cloves of garlic, minced
- 8 oz of spaghetti
- 2 tomatoes, diced
- 2 potatoes, peeled and diced
Instructions:
1. Cook the rice according to package instructions and set aside.
2. In a large skillet, melt the butter over medium heat.
3. Add the red onion, scallions, and garlic to the skillet. Cook until the onions are soft and translucent.
4. Add the diced tomatoes and potatoes to the skillet. Cook until the potatoes are tender.
