Recipe: Spaghetti Carbonara
Ingredients:
- 8 oz spaghetti
- 2 eggs
- 1 tomato, diced
- 1/2 tsp salt
- 4 oz cooked meat of your choice (e.g. bacon, pancetta)
Instructions:
1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
2. In a bowl, whisk together the eggs and salt until well combined.
3. In a large skillet, cook the meat over medium heat until crispy. Remove from skillet and set aside.
4. In the same skillet, add the diced tomato and cook for 2-3 minutes until softened.
5. Add the cooked spaghetti to the skillet with the tomatoes and toss to combine.
6. Remove the skillet from heat and quickly pour in the egg mixture, stirring continuously to coat the spaghetti. The residual heat will cook the eggs without scrambling them.
7. Add the cooked meat back to the skillet and toss everything together.
8. Serve hot and garnish with grated cheese if desired.
