Recipe Name: Spaghetti Carbonara
Ingredients:
- 250g Spaghetti
- 2 eggs
- 100g grated Parmesan cheese
- 150g diced pancetta or bacon
- 2 cloves of garlic, minced
- Salt and pepper to taste
- Olive oil
Instructions:
1. Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
2. In a bowl, whisk together the eggs, grated Parmesan cheese, salt, and pepper. Set aside.
3. In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced pancetta or bacon and cook until crispy.
4. Add the minced garlic to the skillet and cook for another minute until fragrant.
5. Reduce the heat to low and add the cooked spaghetti to the skillet, tossing to combine with the pancetta and garlic.
6. Remove the skillet from the heat and quickly pour the egg and cheese mixture over the spaghetti, tossing continuously to coat the pasta. If the sauce is too thick, add a splash of the reserved pasta water to loosen it up.
7. Serve the spaghetti carbonara hot, garnished with extra grated Parmesan cheese and freshly cracked black pepper.
