Recipe Name: Spanish Chicken and Vegetable Stew

Ingredients:
- 1 whole chicken, cut into pieces (Pollo)
- 2 zucchinis, diced (Calabacín)
- 2 eggplants, diced (Berenjenas)
- 1 tablespoon paprika (Pimentón)
- 1 carrot, sliced (zanahoria)
- 1 onion, chopped (Cebolla)
- 2 potatoes, peeled and diced (Patatas)
- Salt and pepper to taste
- Olive oil
- 4 cups chicken broth

Instructions:
1. In a large pot, heat some olive oil over medium heat.
2. Season the chicken pieces with salt, pepper, and paprika. Brown the chicken in the pot until golden on all sides. Remove and set aside.
3. In the same pot, add a bit more olive oil if needed and sauté the onions until translucent.
4. Add the carrots, zucchinis, and eggplants to the pot. Cook for a few minutes until they start to soften.
5. Return the chicken pieces to the pot and add the diced potatoes.
6. Pour in the chicken broth and bring the stew to a simmer.
7. Cover the pot and let it cook for about 30-40 minutes, or until the chicken is cooked through and the vegetables are tender.
8. Adjust seasoning with salt and pepper if needed.
9. Serve the Spanish Chicken and Vegetable Stew hot, garnished with some fresh herbs if desired.
