Ingredients:
- 4 medium-sized potatoes
- 1 onion
- 4 eggs
- 1 tomato
- Salt, to taste
- Black pepper, to taste
- Olive oil, for frying

Step-by-Step Guide:

1. Peel the potatoes and cut them into thin slices. Finely chop the onion and dice the tomato.

2. Heat a generous amount of olive oil in a large non-stick frying pan over medium heat.

3. Add the sliced potatoes to the pan and cook them until they are golden brown and crispy. Stir occasionally to ensure even cooking.

4. Once the potatoes are cooked, remove them from the pan using a slotted spoon and set them aside to drain excess oil.

5. In the same pan, add the chopped onion and sauté until it becomes translucent and slightly caramelized.

6. While the onion is cooking, beat the eggs in a separate bowl. Season with salt and black pepper according to your taste.
