Make Spanish Rice

Spanish Rice

Ingredients:

- 2 cups of long grain white rice
- 1 large onion, diced
- 1 (14.5 ounce) can of diced tomatoes
- 2 tablespoons olive oil
- 2 cups of water
- Salt and pepper to taste

Instructions:

1. Heat the olive oil in a large skillet over medium heat.

2. Add the diced onion and cook until softened, about 5 minutes.

3. Add the rice and stir to coat with the oil.

4. Add the canned tomatoes and stir to combine.

5. Add the water and season with salt and pepper.

6. Bring the mixture to a boil, then reduce the heat to low and cover.

7. Simmer for 20 minutes, or until the rice is cooked through and all the liquid is absorbed.

8. Fluff the rice with a fork and serve. Enjoy!
