Spanish Rice and Egg Skillet

Ingredients:

- 2 tablespoons olive oil
- 1 cup white rice
- 2 bell peppers, diced
- 1 cup diced tomatoes
- 2 cups water
- Salt and pepper, to taste
- 4 eggs

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the rice and bell peppers and cook for 3-4 minutes, stirring occasionally, until the rice is lightly toasted.

3. Add the tomatoes and water and season with salt and pepper. Bring to a boil, then reduce the heat to low and cover. Simmer for 15-20 minutes, until the rice is cooked through.

4. Make four wells in the rice and crack an egg into each one. Cover and cook for 5-7 minutes, until the eggs are cooked to your desired doneness.

5. Serve the Spanish rice and egg skillet warm. Enjoy!
