Make Spanish Rice Omelette
Spanish Rice Omelette
Ingredients:
- 2 cups cooked rice
- 2 tomatoes, diced
- 2 peppers, diced
- 2 tablespoons ketchup
- 4 eggs
- 2 slices of bread, diced
- 1 onion, diced
- 1 leek, diced
- 2 cloves garlic, minced
Instructions:
1. Preheat oven to 350°F.
2. In a large bowl, combine cooked rice, tomatoes, peppers, ketchup, eggs, bread, onion, leek, and garlic.
3. Mix until all ingredients are evenly distributed.
4. Grease a 9x13 inch baking dish with cooking spray.
5. Pour the mixture into the baking dish and spread evenly.
6. Bake in preheated oven for 25-30 minutes, or until the top is golden brown and the center is set.
7. Remove from oven and let cool for 10 minutes before serving. Enjoy!
