Ingredients:
- 4 eggs
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves of garlic, minced
- 2 tomatoes, diced
- 1 tsp salt
- 1 cup of rice
Step by Step Guide:
1. In a large skillet, heat some oil over medium heat.
2. Add the diced onion and bell pepper to the skillet and sauté until they start to soften, about 5 minutes.
3. Add the minced garlic and cook for another minute until fragrant.
4. Stir in the diced tomatoes and cook for a few more minutes until they start to break down.
5. Add the rice to the skillet and stir to combine with the vegetables.
6. Pour in 2 cups of water and add the salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes, or until the rice is cooked through.
7. Make 4 wells in the rice mixture and crack an egg into each well.
8. Cover the skillet and cook for another 5-7 minutes, or until the eggs are cooked to your liking.
