Recipe Name: Spiced Tomato Rice
Ingredients:
- 1 cup of rice
- 2 cloves of garlic, minced
- 1 tomato, diced
- 1 onion, chopped
- 1 bell pepper, diced
- 1 teaspoon of coriander powder
- Salt and pepper to taste
- 2 cups of water
- 2 tablespoons of oil
Instructions:
1. Rinse the rice under cold water until the water runs clear. Drain and set aside.
2. In a large pot, heat the oil over medium heat. Add the minced garlic and chopped onion, sauté until fragrant.
3. Add the diced tomato and bell pepper to the pot, cook until they start to soften.
