Indian Spiced Chicken and Rice

-2 tablespoons vegetable oil
-1 large onion, diced
-2 cloves garlic, minced
-1 teaspoon ginger, minced
-1 teaspoon ground cumin
-1 teaspoon ground coriander
-1 teaspoon garam masala
-1 teaspoon turmeric
-1 teaspoon paprika
-1/2 teaspoon cayenne pepper
-1/2 teaspoon ground cardamom
-1/2 teaspoon ground cinnamon
-1/2 teaspoon ground black pepper
-1/2 teaspoon salt
-1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
-1 cup long-grain white rice
-2 cups chicken broth

1. Heat the oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.

2. Add the garlic, ginger, cumin, coriander, garam masala, turmeric, paprika, cayenne pepper, cardamom, cinnamon, black pepper, and salt. Cook, stirring, for 1 minute.

3. Add the chicken and cook until lightly browned, about 5 minutes.

4. Add the rice and stir to combine.

5. Add the chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer for 20 minutes, or until the rice is tender and the liquid is absorbed.

6. Serve hot. Enjoy!
