Spicy Bean and Whole Wheat Pilaf
Ingredients:
-1 tablespoon of butter
-1/2 cup of diced onion
-1 jalapeño, diced
-2 cloves of garlic, minced
-1 teaspoon of black cardamom
-1 teaspoon of black cumin
-1 teaspoon of sugar
-1/2 teaspoon of ground cinnamon
-1/2 cup of diced tomatoes
-1/2 cup of peas
-1/2 cup of cooked beans
-1/2 cup of uncooked whole wheat
-1 teaspoon of chopped fresh rosemary
Instructions:
1. Heat the butter in a large skillet over medium heat.
2. Add the onion, jalapeño, garlic, black cardamom, black cumin, sugar, and cinnamon. Cook, stirring occasionally, until the onion is softened, about 5 minutes.
3. Add the tomatoes, peas, beans, and whole wheat. Stir to combine.
4. Add 1/2 cup of water and bring to a simmer. Reduce the heat to low and cover the skillet. Simmer until the liquid is absorbed and the whole wheat is tender, about 15 minutes.
5. Stir in the rosemary and season with salt and pepper to taste. Serve hot.
