Recipe Name: Spicy Black Bean and Quinoa Stuffed Sweet Potatoes

Ingredients:
- 4 medium sweet potatoes
- 1 cup cooked black beans
- 1 cup cooked red quinoa
- 1 cup corn kernels
- 1 large tomato, diced
- 1 red bell pepper, diced
- 1 jalapeno pepper, finely chopped
- 2 tablespoons extra virgin olive oil
- 1/4 cup chopped cilantro
- Sea salt, to taste
- 1 small onion, diced
- Juice of 1 lime
- 2 cloves garlic, minced
- 2 dried guajillo chili peppers, soaked and chopped
- 1/2 teaspoon turmeric

Instructions:
1. Preheat the oven to 400°F (200°C).
2. Wash the sweet potatoes and pierce them with a fork. Place them on a baking sheet and bake for about 45-50 minutes, or until they are tender.
3. In a large skillet, heat the olive oil over medium heat. Add the onion and cook until translucent, about 5 minutes.
4. Add the garlic, jalapeno pepper, red bell pepper, and guajillo chili peppers to the skillet. Cook for another 2-3 minutes.
5. Stir in the cooked black beans, red quinoa, corn, diced tomato, turmeric, and salt. Cook for an additional 5 minutes, allowing the flavors to meld together.
6. Remove the skillet from heat and stir in the cilantro and lime juice.
7. Once the sweet potatoes are cooked, remove them from the oven and let them cool slightly. Cut each sweet potato in half lengthwise and fluff the insides with a fork.
8. Spoon the black bean and quinoa mixture into each sweet potato half, dividing it evenly among them.
9. Place the stuffed sweet potatoes back in the oven and bake for an additional 10-15 minutes, until heated through.
10. Serve the stuffed sweet potatoes hot, garnished with extra cilantro and a squeeze of lime juice if desired. Enjoy your delicious and nutritious meal!
