Spicy Chicken and Rice

Ingredients:

- 2 cups of uncooked white rice
- 2 boneless, skinless chicken breasts
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 teaspoon of garlic powder
- 1 teaspoon of chili powder
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- Salt and pepper to taste
- 2 tablespoons of olive oil

Instructions:

1. Preheat oven to 350 degrees Fahrenheit.

2. In a large bowl, combine the garlic powder, chili powder, cumin, paprika, salt and pepper.

3. Cut the chicken breasts into cubes and add to the bowl. Mix until the chicken is evenly coated with the spices.

4. Heat the olive oil in a large skillet over medium-high heat. Add the chicken cubes and cook for 5 minutes, stirring occasionally.

5. Add the bell peppers to the skillet and cook for an additional 5 minutes.

6. Meanwhile, cook the rice according to package instructions.

7. Once the chicken and peppers are cooked through, add the cooked rice to the skillet and mix everything together.

8. Transfer the mixture to an oven-safe baking dish and bake in the preheated oven for 15 minutes.

9. Serve the spicy chicken and rice hot. Enjoy!
