Spicy Chicken and Rice

Ingredients:

- 2 tablespoons olive oil
- 2 boneless, skinless chicken breasts, cut into cubes
- 1 teaspoon paprika
- 1/2 teaspoon chili pepper
- 1/2 cup uncooked white rice
- 1 cup diced tomatoes
- 1 cup chicken broth

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the chicken cubes and season with the paprika and chili pepper. Cook until the chicken is cooked through, about 5 minutes.

3. Add the rice and stir to combine. Cook for 2 minutes.

4. Add the tomatoes and chicken broth. Bring to a boil, reduce heat to low, and simmer for 20 minutes, or until the rice is cooked through.

5. Serve hot. Enjoy!
