Spicy Chicken and Rice
Ingredients:
- 1 cup uncooked white rice
- 2 boneless, skinless chicken breasts, cut into cubes
- 1 onion, diced
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions:
1. In a medium saucepan, bring 2 cups of water to a boil. Add the rice and stir. Reduce heat to low, cover, and simmer for 15 minutes.
2. Meanwhile, heat a large skillet over medium-high heat. Add the chicken cubes and cook until golden brown, about 5 minutes.
3. Add the onion, tomatoes, garlic, and cumin to the skillet and cook until the vegetables are softened, about 5 minutes.
4. Add the cooked rice to the skillet and stir to combine. Season with salt and pepper to taste.
5. Reduce heat to low and simmer for 10 minutes, stirring occasionally.
6. Serve hot. Enjoy!
