Make Spicy Chicken and Vegetable Stir-Fry

Ingredients:
- 2 chicken breasts, sliced into thin strips
- 1 onion, sliced
- 1/2 cup tomato puree
- 2 potatoes, diced
- 1 bell pepper, sliced
- 1 carrot, sliced
- 1 jalapeno, sliced (seeds removed for less heat)
Instructions:
1. Heat some oil in a large skillet or wok over medium-high heat.
2. Add the sliced chicken breast strips and cook until browned and cooked through. Remove from the skillet and set aside.
3. In the same skillet, add the sliced onion and cook until translucent.
4. Add the diced potatoes and cook until slightly tender.
5. Stir in the sliced bell pepper, carrot, and jalapeno. Cook for a few minutes until the vegetables are slightly softened.
6. Add the tomato puree to the skillet and stir well to combine with the vegetables.
7. Return the cooked chicken to the skillet and mix everything together.
8. Cook for another few minutes until everything is heated through and well combined.
9. Season with salt and pepper to taste.
