Spicy Egg Scramble
Ingredients:
- 2 eggs
- 2 tablespoons of chopped fresh coriander
- 1/4 teaspoon of salt
- 1/4 teaspoon of pepper
- 1/4 teaspoon of chilli powder
- 1/2 tomato, diced
Instructions:
1. Crack the eggs into a bowl and whisk until combined.
2. Add the chopped coriander, salt, pepper, and chilli powder to the eggs and mix until combined.
3. Heat a non-stick skillet over medium-high heat and add the egg mixture.
4. Cook the eggs, stirring occasionally, until they are scrambled and cooked through.
5. Add the diced tomato to the skillet and cook for an additional 2 minutes.
6. Serve the egg scramble warm with your favorite sides. Enjoy!
