Spicy Fish with Cucumber and Tomato

Ingredients:

- 2 fillets of white fish
- 1 cucumber, diced
- 1 tomato, diced
- 1 onion, diced
- 1 chilli, finely chopped
- 2 tablespoons of olive oil
- Salt and pepper to taste

Instructions:

1. Preheat oven to 350°F.

2. Heat the olive oil in a large skillet over medium-high heat.

3. Add the onion and chilli and cook for 3-4 minutes, stirring occasionally.

4. Add the fish fillets and cook for 3-4 minutes on each side, until golden brown.

5. Transfer the fish to a baking dish and top with the cucumber and tomato.

6. Bake in the preheated oven for 10-15 minutes, until the fish is cooked through.

7. Serve with salt and pepper to taste. Enjoy!
