Spicy Mince and Mushroom Pasta

Ingredients:

- 1 lb. of uncooked pasta
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 8 ounces of mushrooms, sliced
- 1 lb. of ground beef
- 1 green pepper, diced
- 1 onion, diced
- 2 tomatoes, diced
- 1 teaspoon of freshly grated ginger
- 1 cup of beef stock
- Salt and pepper, to taste

Instructions:

1. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 8 minutes. Drain and set aside.

2. Heat the olive oil in a large skillet over medium-high heat. Add the garlic, mushrooms, ground beef, green pepper, and onion. Cook, stirring occasionally, until the beef is browned and the vegetables are softened, about 8 minutes.

3. Add the tomatoes, ginger, and beef stock to the skillet. Bring to a simmer and cook for 5 minutes.

4. Add the cooked pasta to the skillet and stir to combine. Season with salt and pepper, to taste.

5. Serve the spicy mince and mushroom pasta hot. Enjoy!
