Spicy Potato Curry

Ingredients:
- 1 large onion, diced
- 1 teaspoon salt
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 2 potatoes, peeled and diced
- 2 green chilies, chopped
- 2 tablespoons ghee
- 1 teaspoon cumin
- 1 teaspoon red chilli powder
- 1/2 teaspoon turmeric
- 1 teaspoon coriander powder

Instructions:

1. Heat the ghee in a large skillet over medium heat.

2. Add the onion and salt and cook until the onion is softened, about 5 minutes.

3. Add the garlic and cook for 1 minute.

4. Add the tomatoes, potatoes, green chilies, cumin, red chilli powder, turmeric, and coriander powder.

5. Stir to combine and cook for 5 minutes.

6. Reduce the heat to low, cover, and cook for 15 minutes, stirring occasionally.

7. Uncover and cook for an additional 5 minutes, or until the potatoes are tender.

8. Serve hot with your favorite accompaniments. Enjoy!
