Recipe Name: Spicy Potato Curry
Ingredients:
- 4 medium potatoes, peeled and diced
- 2 tomatoes, chopped
- 1 onion, finely chopped
- 1-inch piece of ginger, grated
- 4 cloves of garlic, minced
- 2 spicy green chilies, chopped
- 1 non-spicy red chili, chopped
- 1/2 cup curd
- 1/4 cup milk
- Juice of 1 lemon
- 1 carrot, sliced
- 1 cucumber, diced
- Spices: 1 tsp cumin seeds, 1 tsp turmeric powder, 1 tsp coriander powder, 1 tsp red chili powder, salt to taste, fresh coriander leaves for garnish
Instructions:
1. Heat some oil in a pan and add cumin seeds. Let them splutter.
2. Add the chopped onions and sauté until translucent.
3. Add the grated ginger, minced garlic, and chopped green chilies. Cook for a minute.
4. Add the chopped tomatoes and cook until they are soft and mushy.
5. Add the turmeric powder, coriander powder, red chili powder, and salt. Mix well.
6. Add the diced potatoes and mix until they are coated with the masala.
7. Pour in the curd and milk. Stir well and let it simmer on low heat until the potatoes are cooked through.
8. Add the sliced carrots and diced cucumber. Cook for a few more minutes.
9. Squeeze in the lemon juice and give it a final stir.
10. Garnish with fresh coriander leaves and chopped non-spicy red chili.
11. Serve hot with rice or roti.
