Make Spicy Sichuan-Style Braised Sea Bass
Recipe Name: Spicy Sichuan-Style Braised Sea Bass
Ingredients:
- 1 whole sea bass (about 1 kg), cleaned and scaled
- 2 tablespoons Sichuan peppercorns
- 2-3 dried red chilies
- 2 tablespoons chili oil
- 3 tablespoons soy sauce
- 1 tablespoon Shaoxing wine
- 1 tablespoon sugar
- 2-3 slices of ginger
- 4-5 cloves of garlic, minced
- 2 green onions, chopped
- 1 cup water
- Salt, to taste
- Vegetable oil
Instructions:
1. Pat the sea bass dry with paper towels and make 2-3 diagonal cuts on each side of the fish.
2. Heat a pan over medium heat and dry roast the Sichuan peppercorns until fragrant. Remove from the pan and crush them slightly.
3. In the same pan, add a little vegetable oil and fry the dried red chilies until aromatic. Remove and set aside.
4. In the same pan, add more oil if needed and gently place the sea bass in the pan. Fry on each side until lightly browned. Remove and set aside.
5. In the same pan, add a bit more oil and sauté the ginger and garlic until fragrant.
6. Add the crushed Sichuan peppercorns, dried red chilies, chili oil, soy sauce, Shaoxing wine, sugar, and water to the pan. Stir well to combine.
7. Carefully place the sea bass back into the pan and spoon the sauce over the fish.
8. Cover the pan and simmer for about 10-15 minutes, or until the fish is cooked through.
9. Taste the sauce and adjust seasoning with salt if needed.
10. Garnish with chopped green onions before serving.
