Make Spicy Spinach and Black Bean Pasta
Recipe Name: Spicy Spinach and Black Bean Pasta
Ingredients:
- 8 oz pasta
- 2 cups fresh spinach, chopped
- 1 white onion, diced
- 1 red pepper, diced
- 2 tbsp olive oil
- 1/4 cup fresh basil, chopped
- 3 cloves garlic, minced
- 1 tsp dried thyme
- 2 tbsp tomato paste
- 1 stalk celery, diced
- 1/4 tsp cayenne pepper
- 1 can black beans, drained and rinsed
- Salt and pepper to taste
Instructions:
1. Cook the pasta according to package instructions. Drain and set aside.
2. In a large skillet, heat the olive oil over medium heat.
3. Add the white onion, red pepper, garlic, and celery. Cook until the vegetables are softened, about 5 minutes.
4. Stir in the tomato paste, cayenne pepper, thyme, salt, and pepper. Cook for another 2 minutes.
5. Add the black beans and chopped spinach to the skillet. Cook until the spinach is wilted.
6. Toss in the cooked pasta and mix well to combine all the ingredients.
