Make Spicy Tomato Cabbage Stir-Fry

Recipe Name: Spicy Tomato Cabbage Stir-Fry

Ingredients:
- 2 tomatoes, diced
- 1/2 head of cabbage, thinly sliced
- Handful of fresh coriander leaves, chopped
- 2 green chillies, sliced
- 1-inch piece of ginger, minced
- 3 cloves of garlic, minced
- 2 carrots, julienned
- Salt to taste
- 1 tablespoon oil

Instructions:
1. Heat oil in a large pan or wok over medium heat.
2. Add minced ginger and garlic, and sauté for a minute until fragrant.
3. Add sliced green chillies and julienned carrots, and stir-fry for 2-3 minutes until slightly tender.
4. Add diced tomatoes and cook for another 2-3 minutes until they start to soften.
5. Add thinly sliced cabbage to the pan, sprinkle with salt, and toss everything together.
6. Cook for 5-7 minutes, stirring occasionally, until the cabbage is cooked but still slightly crunchy.
7. Finally, add chopped coriander leaves and give it a final stir.
8. Remove from heat and serve hot as a side dish or over steamed rice.
