Make Spicy Tomato Pasta with Poached Eggs

Ingredients:
- 1 onion, finely chopped
- 2 tomatoes, diced
- 200g pasta of your choice
- 4 eggs
- 3 cloves of garlic, minced
- Salt to taste
- 1 tsp chilli powder
- 2 tbsp olive oil
Instructions:
1. Cook the pasta according to package instructions until al dente. Drain and set aside.
2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sauté until fragrant.
3. Add the diced tomatoes, salt, and chilli powder. Cook for about 5-7 minutes until the tomatoes are soft and saucy.
4. Add the cooked pasta to the skillet and toss to coat with the tomato sauce. Adjust seasoning if needed.
5. In a separate pot, bring water to a gentle simmer. Crack the eggs, one at a time, into a small bowl and gently slide them into the simmering water. Poach the eggs for about 3-4 minutes until the whites are set but the yolks are still runny.
6. Serve the spicy tomato pasta in bowls and top each serving with a poached egg. Sprinkle with a little extra chilli powder if desired.
