Salmon and Spinach Pie

Ingredients:

- 2 tablespoons olive oil

- 1 onion, chopped

- 2 cloves garlic, minced

- 2 cups fresh spinach, chopped

- 1/2 teaspoon dried oregano

- 1/4 teaspoon salt

- 1/4 teaspoon pepper

- 2 cups cooked salmon, flaked

- 1/2 cup shredded mozzarella cheese

- 1/2 cup shredded cheddar cheese

- 2 9-inch unbaked pie crusts

Instructions:

1. Preheat oven to 375 degrees F.

2. Heat olive oil in a large skillet over medium heat. Add onion and garlic and cook until softened, about 5 minutes.

3. Add spinach, oregano, salt, and pepper and cook until spinach is wilted, about 3 minutes.

4. Remove from heat and stir in salmon and cheeses.

5. Place one of the pie crusts in a 9-inch pie plate. Pour in the salmon and spinach mixture.

6. Top with the remaining pie crust and crimp the edges to seal.

7. Cut a few slits in the top of the crust to allow steam to escape.

8. Bake for 25-30 minutes, or until the crust is golden brown.

9. Let cool for 10 minutes before serving. Enjoy!
