Tortellini with Tomatoes and Spinach
Ingredients:
- 9 ounces of cheese tortellini
- 1 tablespoon olive oil
- 1/2 cup diced tomatoes
- 1/2 cup chopped spinach
- 2 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- Salt and pepper to taste
Instructions:
1. Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions.
2. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the tomatoes, spinach, garlic, and red pepper flakes. Cook for 3-4 minutes, stirring occasionally, until the vegetables are softened.
3. Drain the tortellini and add it to the skillet. Stir to combine.
4. Season with salt and pepper to taste. Serve warm. Enjoy!
