Spinach and Cashew Curry

Ingredients:

- 2 tablespoons butter
- 1/2 cup chopped almonds
- 1/2 cup chopped cashews
- 1/2 teaspoon turmeric
- 1/2 teaspoon salt
- 2 cups cooked wheat
- 2 cups milk
- 2 cups fresh spinach, chopped

Instructions:

1. Heat the butter in a large skillet over medium heat.

2. Add the almonds and cashews and cook, stirring occasionally, until lightly browned, about 3 minutes.

3. Add the turmeric and salt and stir to combine.

4. Add the cooked wheat and stir to combine.

5. Add the milk and bring to a simmer.

6. Add the spinach and cook, stirring occasionally, until the spinach is wilted and the sauce has thickened, about 5 minutes.

7. Serve hot over cooked rice or with naan bread. Enjoy!
