Spinach and Cheese Frittata
Ingredients:
- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups fresh spinach, chopped
- 4 large eggs
- 1/2 cup shredded cheese
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup water
- 1 tomato, diced
Instructions:
1. Preheat oven to 350°F.
2. Heat olive oil in a large oven-safe skillet over medium heat. Add onion and garlic and cook until softened, about 3 minutes.
3. Add spinach and cook until wilted, about 2 minutes.
4. In a medium bowl, whisk together eggs, cheese, salt, and pepper.
5. Pour egg mixture into skillet and stir to combine with spinach mixture.
6. Pour water into skillet and stir to combine.
7. Top with diced tomato.
8. Place skillet in preheated oven and bake for 20-25 minutes, or until eggs are set.
9. Let cool for 5 minutes before serving. Enjoy!
