Spinach and Cheese Frittata
Ingredients:
- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups spinach, chopped
- 4 eggs
- 1/2 cup shredded cheese
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup water
- 1 tomato, diced
Instructions:
1. Preheat oven to 350°F.
2. Heat olive oil in a large oven-safe skillet over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
3. Add spinach and cook until wilted, about 2 minutes.
4. In a medium bowl, whisk together eggs, cheese, salt, and pepper.
5. Pour egg mixture into the skillet and stir to combine with the vegetables.
6. Pour water into the skillet and stir to combine.
7. Sprinkle tomato over the top of the frittata.
8. Place skillet in the oven and bake for 20 minutes, or until the eggs are set.
9. Remove from oven and let cool for 5 minutes before serving. Enjoy!
