Coconut Millet Spinach Pilaf

Ingredients:

-1 cup millet
-2 cups vegetable broth
-1/2 teaspoon salt
-1/4 teaspoon black pepper
-1/4 cup coconut oil
-1/2 cup diced onion
-2 cloves garlic, minced
-2 cups fresh spinach, chopped
-1/2 cup shredded coconut

Instructions:

1. In a medium saucepan, bring the vegetable broth to a boil.

2. Add the millet, salt, and pepper. Reduce the heat to low and simmer, covered, for 15 minutes.

3. Heat the coconut oil in a large skillet over medium heat. Add the onion and garlic and cook until the onion is softened, about 5 minutes.

4. Add the spinach and cook until wilted, about 3 minutes.

5. Add the cooked millet to the skillet and stir to combine.

6. Stir in the shredded coconut and cook until heated through, about 2 minutes.

7. Serve hot. Enjoy!
