Make Spinach and Egg Fried Rice
Spinach and Egg Fried Rice
Ingredients:
- 2 cups cooked white rice
- 2 cups fresh spinach, chopped
- 2 eggs, lightly beaten
- 2 tablespoons curry powder
- 1 carrot, diced
- 1 apple, diced
- 2 tablespoons ketchup
- 1 onion, diced
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions:
1. Heat a large skillet over medium-high heat.
2. Add the onion and cook until softened, about 5 minutes.
3. Add the carrots and apples and cook for another 5 minutes.
4. Add the spinach and cook until wilted, about 3 minutes.
5. Add the curry powder, chili powder, and ketchup and stir to combine.
6. Push the vegetables to the side of the skillet and add the beaten eggs.
7. Scramble the eggs until cooked through, about 2 minutes.
8. Add the cooked rice and stir to combine.
9. Season with salt and pepper to taste.
10. Serve with a scoop of ice cream. Enjoy!
