Spinach and Egg Scramble

Ingredients:

- 2 tablespoons of butter
- 2 cups of spinach
- 2 eggs
- 2 tablespoons of plain yogurt
- 2 tablespoons of milk
- Salt and pepper to taste
- 2 tablespoons of grated cheese
- 2 tablespoons of tomato paste
- 2 tablespoons of sour cream
- 2 tablespoons of cucumber, diced

Instructions:

1. In a large skillet, melt the butter over medium heat.

2. Add the spinach and cook until wilted, about 5 minutes.

3. In a medium bowl, whisk together the eggs, yogurt, milk, salt, and pepper.

4. Pour the egg mixture into the skillet and cook, stirring occasionally, until the eggs are cooked through.

5. Add the cheese, tomato paste, sour cream, and cucumber and stir until combined.

6. Serve warm with a dollop of kaymak. Enjoy!
