spinach, and feta
Spinach and Feta Frittata
Ingredients:
- 6 large eggs
- 2 cups of fresh spinach, chopped
- 1/2 cup of feta cheese, crumbled
- 2 tablespoons of olive oil
- Salt and pepper, to taste
Instructions:
1. Preheat oven to 350 degrees F.
2. Heat olive oil in a large oven-safe skillet over medium heat.
3. Add the chopped spinach and cook for 2-3 minutes, stirring occasionally, until the spinach is wilted.
4. In a medium bowl, whisk together the eggs, feta cheese, salt, and pepper.
5. Pour the egg mixture into the skillet with the spinach and stir to combine.
6. Cook for 3-4 minutes, stirring occasionally, until the eggs are beginning to set.
7. Place the skillet in the preheated oven and bake for 15-20 minutes, or until the eggs are cooked through.
8. Serve warm. Enjoy!
